  2. Get 1 cup Curds
  3. Make ready Green Chillies as required
  4. Make ready 1 tsp Vegetable Oil
  5. Prepare 10 Curry Leaves (small)
  6. Make ready For Seasoning Fenugreek Seeds Mustard seeds Cumin seeds
  7. Prepare 1 teaspoon Salt

Instructions to make Malabar Spinach with Curds:
  1. Heat vegetable oil in a pan.
  2. Add mustard seeds, cumin seeds and fenugreek seeds. Fry till crackling.
  3. Now add the chopped greens, green chilli and salt. Cover it with a lid and cook over low flame for 2 minutes.
  4. Take it into a bowl. Let it come to room temperature.
  5. Now take a cup of curds and stir it well. Add this to the cooked greens. Mix well.
  6. Garnish this with curry leaves and serve it with rice or chapati.
  7. Note that the colour of the greens doesn't change on cooking. I also used the tender stems(chopped) of the greens. You can use it as per your taste.
