  2. Make ready 1 potato peeled and cubed
  3. Get 3 tsp mustard seeds
  4. Prepare 5-6 garlic cloves
  5. Take 1 green chilli chopped
  6. Take 1 onion chopped
  7. Prepare 1/2 tsp turmeic powder
  8. Prepare 1/2 tsp chilli powder
  9. Make ready To taste salt
  10. Get 2 tbsp mustard oil

Instructions to make Malabar Spinach Curry:
  1. Remove malabar spinach leaves off their stems.
  2. Wash both the leaves and stems well. Then chop the leaves roughly. Also chop the stems into pieces of 2-3 inches length. Keep them aside.
  3. Blend mustard seeds, garlic cloves and green chilli to a fine paste.
  4. Heat oil in a pan. Add onion and fry till brown. Add potato cubes and stems of malabar spinach. Next add turmeic powder, chilli powder, salt and saute for a while.
  5. Now add mustard paste with 1/2 cup of water or as needed. Cover and allow to cook for 10 minutes on a medium heat.
  6. Open the lid and finally add malabar spinach leaves. Cook it covered for 4-5 minutes or till water dries up. Turn off the flame.
  7. Serve hot with rice as a side dish.
