  1. Let pork soak in saltwater for 2 hours or so. Meat will look hazy when done. Rice in cold water to remove brine before proceeding.
  2. Dice or cube pork and mix with dry spices.
  3. Dice and brown onions and pablano peppers until lightly brown
  4. As pork browns mix in pablano peppers and onions
