Instructions to make Sausage and Spinach Doria (Rice Gratin):
  1. Slice the onion. Cut the sausage diagonally. Cut the spinach into 4 cm lengths.
  2. Heat olive oil in a pan. Put the onion, sausage and spinach stem and fry.
  3. Turn off the heat and add flour and butter. Stir everything in the pan well with a wooden spatula until the flour is absorbed.
