  1. Get 1 cup toor dal
  2. Take 1/4 cup elephant's yam suran diced
  3. Get 1/4 cup raw papaya diced
  4. Prepare 1/4 cup pumpkin diced
  5. Get 1 brinjal diced
  6. Get 1 potato diced
  7. Take 1 carrot diced
  8. Get 1 tomato chopped
  9. Get 1 onion finely chopped
  10. Get 1 tbsp ginger garlic rough paste
  11. Take 2 green chillies chopped
  12. Take 2 tbsp ghee
  13. Make ready 2 bay leaves
  14. Take 2 dry red chillies
  15. Take 1 tsp paanch phoran
  16. Make ready 1 tbsp dalma masala
  17. Make ready 1/2 tsp turmeric powder
  18. Prepare 1 tsp red chilli powder
  19. Get For dalma spice mix
  20. Get 2 tbsp fennel seeds
  21. Make ready 3 tbsp cumin seeds
  22. Prepare 2-3 piece cinnamon
  23. Get 3 tsp black pepper
  24. Take For garnish
  25. Prepare As needed Coconut slices
  26. Take as needed Coriander leaves
  27. Make ready 3-4 red dry chillies

Steps to make Dalma:
  1. Dry roast all dalma spice ingredients & grind into fine powder.
  2. Wash & soak dal for couple of hours. Then in pressure cooker, add dal, vegetables dices, green chillies, onions, bay leaf, turmeric powder & salt. Also add water about 2-3 cups.
  3. Pressure cook it for 3 whistles, then turn of the flame to low & let it simmer for 3 minutes. Then turn off heat. Let it cook till all pressure is released.
    1. Now in other vessel, heat ghee, add paanch phoran, red chillies, red chilli powder, let it saute on flow same for just couple of seconds then add ginger garlic & saute for more couple of seconds.
  4. Then add this tempering to dalma, also add dalma masala in it & give a gentle stir. Add water if needed for your desired consistency. Cook for few more minutes on slow flame so that aroma & taste of spices is infused properly in dalma. Then turn off the heat.
  5. Serve hot with steamed rice.
