The ingredients needed to make Roasted kielbasa and vegetables:
  1. Make ready 3 each med sweet potatoes, peeled and cut into 1 inch pieces
  2. Take 1 each med sweet onion, cut into 1 inch pieces
  3. Make ready 4 each medium carrots, cut into 1 inch pieces
  4. Take 2 tbsp olive oil
  5. Make ready 1 lb smoked kielbasa or polish sausage, halved and cut into 1 inch pieces( I used about a pound and a half )
  6. Make ready 1 each med yellow summer squash, cut into 1 in pieces
  7. Prepare 1 each medium zuccini, cut into 1 inch pieces
  8. Get 1/4 salt or seasoning salt
  9. Get 1/4 tsp pepper
  10. Get 3 each small to med tomatoes( I added these, not origionally called for in recipe)
  11. Make ready 1 a touch of Dijon mustard, optional ( I didnt use it)
  12. Make ready 1/4 tsp celery salt( optional, I added this )
