The ingredients needed to make Basil Hummus:
  1. Get 2 cups chickpeas dried
  2. Prepare 1 tsp Baking soda
  3. Make ready 3-5 garlic cloves
  4. Make ready 1 lemon - juice
  5. Prepare 1 tsp salt
  6. Prepare 3/4 cup sesame paste(Tahina)
  7. Get 1 cup.cold water
  8. Prepare 10-12 fresh basil leaves
  9. Prepare 1 tsp roast3d zeera powder
  10. Take 2 tbsp olive oil

I recommend buying a whole plant, or if you have a Trader Joes they carry a huge pack of basil at an amazing price. I was fortunate enough to be invited recently to dinner at the table of a celebrity chef in Lebanon (and the region), Chef Richard. I created this recipe because I had too much basil left over from another recipe. It turned out fantastic and now it's on my list of favorites.

Steps to make Basil Hummus:
  1. Soak the chickpeas over nite at least 12 to 18 hrs
  2. Take the chcikpeas,add the bakong soda,garlic pods and water and pressure cook for 6 to 8 whistles
  3. Once cool open and remove the chickpeas and separate the garlic pods
  4. Remove the skin of the chickpeas,they will easily come off due to the addition of baking soda
  5. Mix the salt and lemonj juice and let the salt melt in it
  6. Put the chickpeas and the garlic in the processor
  7. Start processing it,once the salt is dissolved in the lemon juice,slowly pour the juice in the chickpeas
  8. Let the processor run
  9. Now add the tahina and cold water slowly slowly one at a time till you you see the hummus is turned all fluffy
  10. Remove in a bowl
  11. Add fresh hand torn basil.leaves and mix
  12. Garnish with olive oil and zeera powder
  13. Enjoy with bread,pita
