The ingredients needed to make Scallion Pancakes ("Chijimi") with spicy dipping sauce:
  1. Get 1 bunch Scallions, garlic chives, or green onions
  2. Prepare 200 g Flour
  3. Get 1 Egg
  4. Get 600 ml Water
  5. Get 1/2 tsp Salt
  6. Prepare 4-5 g Katsuo-bushi bonito flakes (optional)
  7. Get 2-3 Tbsp oil for frying, sesame is recommended
  8. Make ready Spicy Sauce:
  9. Take 1 clove Garlic, grated
  10. Get 1 tsp Chinese chili bean paste or other spicy sauce "Toubanjan" 豆板醤
  11. Get 2 tsp Soy sauce
  12. Make ready 1 tsp Sugar
  13. Prepare 2 tsp Miso paste
  14. Prepare 2 tsp Sesame oil

Steps to make Scallion Pancakes ("Chijimi") with spicy dipping sauce:
  1. Make your dipping sauce by mixing grated garlic, spicy bean paste, soy sauce, sugar, miso, and sesame oil.
  2. Add sesame seeds to sauce if you wish.
  3. Cut scallions/chives into 2-3 cm pieces.
  4. In a mixing bowl, add 200g flour, 1 egg, 1/2 tsp salt and 600 ml water. Whisk until well mixed. The batter should end up pretty runny.
  5. Add katsuo-bushi/bonito flakes to the bowl if you have them.
  6. Stir scallions/chives into batter.
  7. Mix batter well.
  8. Heat half oil for frying on medium high heat in a big frying pan. Pour in half the batter and fry until bottom starts to brown.
  9. Flip to other side and continue frying until browned. Remove pancake and cook the rest of the batter the same way.
